Gnocchi. These soft and fluffy Italian dumplings may have originated in the Veneto region of Italy, but they are traditional all over Europe. In Germany and Poland, they are known as kopytka (tiny hooves). The Italian word translated gnocchi as “Small bump” and comes from the Old Italian word for knuckle (nocca), which describes this particular paste form. Here in the United States, these simple dumplings are a popular treat in Italian restaurants – different from the ubiquitous pasta, risotto, or polenta.

Traditionally made from potatoes and semolina flour, gnocchi predates the arrival of potatoes in the 16th century. They are made with flour and eggs; sometimes, ricotta cheese and herbs or vegetables (such as spinach) are added for flavor.

Today, many types of gnocchi are popular. Sugar free? Use rice flour as a substitute for semolina. You can replace potatoes with other vegetables such as pumpkin, pumpkin or sweet potato. Spinach-ricotta gnocchi is another variation. Try using other vegetables as a substitute for spinach, such as radishes, mustard greens, or kale. Fresh herbs such as parsley, basil, or tarragon can be added to flavor the dough. The variation is only up to your imagination!

Specialty shops sell fresh gnocchi and supermarkets stock both frozen and dried produce. But they are easy to make at home with common ingredients: potatoes, flour, eggs, salt and pepper. Let the potatoes come to room temperature before adding the flour. Don’t use a food processor; it makes the dough chewy, soft and difficult to work with. Instead, use a potato masher or slicer.

Add flour, salt and beaten egg to the potatoes to form a dough. Then roll it into long string and cut it into bite-sized chunks. They cannot be stored properly, because the dough becomes too soft. Use immediately or freeze for later use.

To cook the gnocchi, put the dumplings gently into the boiling water quickly. In just 2-3 minutes, they’ll float to the top, and you can grab them.

There are many ways to serve them. They love contrast, so it’s best served with strong, strong sauces, from cheese or pesto to Bolognese sauce. Just as gnocchi can be made with leftover mashed potatoes, leftover stew or soup can make a delicious gnocchi sauce. For a healthy wok dinner, stir the cooked gnocchi with dark leafy vegetables (such as radish or kale), diced tomatoes, and white beans. Top with sticky mozzarella and serve with a mixed vegetable salad dressed in a light vinaigrette dressing.

Basic Potato Gnocchi


2 – 3 medium russet potatoes

1 egg

1 teaspoon salt, divided

3/4 cup all-purpose flour, plus more as needed

Olive oil or butter and a pinch of garlic or basil or both (optional, for serving)


If you’re baking potatoes for another meal, add a few more potatoes. If not, bake or boil the potatoes, peel them, place in a medium bowl, mash with a potato masher, and set aside to cool at room temperature. Potatoes take about 45-50 minutes to bake at 350, about 20 minutes to boil (chop them). Potatoes cook if they are easy to stick with a fork.

Beat the eggs with half a teaspoon of salt. Make a hole in the potato, add and mix. Add flour, working from the center out to the sides of the bowl. Knead the mixture with your hands. When it starts to come together, remove it onto a lightly floured board and knead until smooth and well blended. Add more flour as needed. Divide the dough into 4 pieces. The dough should be soft and not too sticky.

Set aside to rest for about half an hour.

Set a pot of water with salt to a boil. It should be about 1/3 full.

Roll 1 piece into a rope about 1/4 inch in diameter. Cut diagonally into 3/4 or 1 inch segments. To create a distinctive fork pattern, roll each piece of dough into the end of the fork to mark it. This is optional; it won’t affect the taste of the gnocchi. The back helps the sauce stick to the gnocchi.

When the water starts to boil, put some of the gnocchi in the pot – not too much. When the gnocchi floats to the top (this should only take a few minutes) transfer it with a serving spoon to a serving plate. Sauté garlic and / or basil in a little butter or olive oil and pour over the gnocchi (this helps keep them from sticking together) and serve. Or, serve with sauce on top.

Repeat the steps with the remaining 3 dough cords. At this point, it helps if you have 2 or more people – one person can chop the gnocchi while the other puts it in the pan and someone else scrubs it with oil. If you do this yourself, you can refrigerate the chunks of gnocchi until you are ready to cook them. Gnocchi goes well with soft vegetables that are cooked or grilled.

Makes 2 to 3 servings.

Optional: use roasted sweet potato instead of russet for sweet potato gnocchi, or use an equal amount of mashed pumpkin or winter squash (DO NOT use the sweet pie filling). Add a little grated sharp parmesan to the mixture. Or add finely chopped fresh herbs to the potatoes before mixing them with the remaining ingredients.

Gnocchi Greens and Beans Skillet


1/2 pound homemade or store-bought gnocchi

1 1/2 cups white beans (self-cooked or canned)

1 tablespoon of olive oil

1 medium onion (about 1 cup, diced)

1/2 teaspoon salt

4 or 5 portobello mushrooms (about 1 cup, diced)

1 bunch Swiss radish, stalks and vegetables

1 head of garlic (about 4 cloves)

1 teaspoon olive oil

1/2 cup white wine

1/2 cup of broth

1 tablespoon potato starch, corn flour or flour

Salt and pepper to taste


Cook the gnocchi and beans. Set aside.

Heat the oil in a large skillet. Peel and chop the onions; add, sprinkle with salt and cook over low heat 2 to 3 minutes.

Clean and chop the mushrooms, cover the pan, and continue cooking while washing and chopping the chard.

Wash the chard; slice the stems about half an inch and add to the pan. Chop the coarse vegetables, add, and cook until wilted. If the pan is too dry, add a little stock or water.

Peel and chop the garlic and add it to cooking chard.

In a small saucepan, combine olive oil, stock, wine, potato starch, salt and pepper. Cook over low heat, stirring frequently, until thickened. Stir in a skillet, along with cooked beans and cooked gnocchi.

Taste and adjust seasonings, if necessary.

Serve with freshly grated Parmesan cheese, as a topping.

Serves 2.

Column: Resource-rich Australia shows the strangeness of any super commodity cycle | Instant News

LAUNCESTON, Australia (Reuters) – For those looking for evidence of a new commodity supercycle, and for those skeptical of a sustainable resource boom, Australian government forecasters have covered it.

The government’s latest Quarterly Resources and Energy Report, released on Monday, describes how some commodities surged during last year’s coronavirus pandemic, as well as how the gains were not comprehensive and may not be easily sustained.

The headline that caught the media’s attention was that the country’s resource and energy exports would hit a record A $ 296 billion ($ 226 billion) in the fiscal year to June 30, 2021.

Australia is the world’s largest exporter of iron ore, liquefied natural gas (LNG) and coking coal, which is used to make steel.

Indonesia ranks second behind Indonesia for thermal coal and third in copper ore shipments, and is a major producer of aluminum and alumina, the raw materials used to make refined metals.

Australia is also the third largest gold producer in the world and the largest net exporter of precious metals, and is a major supplier of battery metals such as nickel and lithium.

The outstanding performance for the country’s resource sector this fiscal year was driven largely by the top iron ore exports, which were estimated at A $ 136 billion, or just under half, of the total export value, according to a report compiled by the Office. Chief Economist of the Ministry of Industry, Science, Energy and Resources.

This is up from the A $ 104 billion iron ore exports in fiscal 2019/20, which was achieved at higher volumes (up 4%) and prices (up 41%).

The massive boom in iron ore revenue is largely a story fabricated in China, the world’s largest importer of steel spent on boosting its economy after being hit by the lockdown imposed to stop the spread of COVID-19.

The Chinese impact can be seen in several other Australian commodities, with copper export revenues up 20% to A $ 12 billion despite volumes shipped slightly lower.

However, it should be noted that apart from iron ore and copper, only the export value of gold increased in 2020/21, to A $ 29 billion from A $ 25 billion.

Australia’s other major resource and energy exports have declined, including LNG, crude oil, alumina, aluminum, zinc, lithium and both types of coal.

Lower prices for most of the fiscal year were largely to blame, although these have started to recover over the past few months.


Much of the commodity super cycle story is built around high demand for resources from China, coupled with a synchronous boost from many other parts of the world as countries act to increase growth through infrastructure spending.

There are also expectations that supply for key commodities will struggle to keep pace, given weak investment spending by producers in response to sharp falls in prices in the early stages of the pandemic.

The Australian government report lends credibility to the demand side of the supercycle vision, but only for the commodities most exposed to China’s industrial strengths, namely iron ore and copper.

While others, including battery metals, are also showing signs of recovery, energy products have been underpinned by temporary factors, such as a reduction in producer production in the case of crude oil and a cold northern winter for LNG.

Where the report becomes more interesting is in its long-term view, which doesn’t see much of a demand-driven super cycle, with Australian energy resources and exports expected to rise to A $ 321.1 billion by 2025/26, a growth rate. a combined annual rate of only 1.7%.

It’s going to be a solid, unspectacular result, albeit far from being a supercycle story.

Digging into the breakdown shows that the commodity reports are expected to be most correlated with the energy transition, with export revenues from lithium expected to surge by about 440% from the current fiscal year to A $ 5.4 billion in 2025/26, while nickel will nearly double fold. to A $ 6.5 billion, and copper up 33% to A $ 16 billion.

In contrast, iron ore, this year’s star to the end of June, is expected to fade by then to A $ 104 billion – the same level as in 2019/20 – while LNG will remain relatively stable and both coal values ​​will decline. .

Overall, the report points out two things, first that the evidence for the emerging commodity supercycle is somewhat mixed, and second that while some commodities are likely to perform well in the coming years, profits will not extend to all.
